Chardonnay is recognised as one of the Hunter Valleys finest varieties, showing many different facets depending on vintage, vineyard and vinification methods. This wine has been made from fruit from our vineyard, with some of the wine fermented in Hungarian, French and American oak barrels and the remainder left to mature on lees in stainless steel tanks. These components have been blended together to produce a wine that is green-straw in colour, with aromas of stone fruit, banana and those vanillin oak and brioche-like yeast characters that barrel fermentation brings.
This Chardonnay has been made from fruit grown on our vineyard, and partially matured in a blend of Hungarian and American oak 300 litre hogshead barrels. The wine shows ripe tropical fruit aromas, underpinned with barrel ferment oak characters such as vanilla and coconut. The silky-smooth palate has flavours of melon and green mango and again those vanillin oak characters play a supporting role in adding a subtle complexity. The textured finish arises from lees stirring during maturation and the wine finishes with a clean acid and fruit finish.
A wine best consumed slightly chilled, it can be served with foods as diverse a sushi, light pasta dishes, tuna steaks or enjoyed by itself. Enjoy our wine in moderation.
