This Semillon is quartz-green in colour with lifted, estery, citrus bud, passionfruit and lemon-grass aromas. As the wine matures it will develop the lemon-butter, toast and marmalade characters consistent with this variety.
The fruit was grown on our home block from a dry and hot year, so we decided to pick a little earlier than usual. To amplify the fruit notes we also used a specific Sauvignon Blanc yeast. When young, the wine exhibits citrus bud and lime aromas and the refined palate possesses grapefruit and lime flavours and a refreshingly dry finish. This wine will mature well over the medium term and, with careful cellaring, will develop bottle -aged toasty and lemon curd notes both on the bouquet and palate.
This wine will complement shell fish salads, asian steamed fish or chicken pasta dishes. Enjoy our wine in moderation.
