Chardonnay is known as one of the Hunter Valley’s icon varieties. This Chardonnay is made from fruit off our own vineyard and partially barrel fermented with a small amount of grape solids. The wine has varietal aromas of nectarine and peach, underpinned by toast oak. The rich, textural palate has stone-fruit flavours and a refreshing acid finish.
Our cellar version of this variety is made in the traditional style of oak barrel fermentation with regular “batonnage” or lees stirring. The balance of the wine is important in this variety, with not allowing the oak to overpower the fruit. A small portion was partially fermented in French oak and then blended back with a portion of unoaked wine that had been matured on its yeast lees in a stainless steel tank. It has aromas of banana, stone-fruit and toasty, vanillin oak. The palate has a creamy texture with flavours of vanilla and peach and a refreshing acid finish.
A delicious wine made for shellfish, pasta, poultry and pork dishes or enjoyed with cheese.
