Semillon is a Hunter Valley staple and can enthral the discerning palate both as a young wine and as it matures. The hot and dry vintage conditions of 2018 have produced a wine that has aromas of varietal citrus bud, lemon grass and talc. The elegant palate has zesty citrus and green mango flavours and possesses a sherbet-like drying finish.
Made in a consumer-friendly style of skin contact and use of a Sauvignon Blanc specific yeast, this is probably our lightest and driest wine. Cold fermented to retain fruit characters, the wine has citrus bud, lemongrass and passionfruit characters with a hint of green mango. The palate again is citrus-based and balanced to finish dry but not too acidic. Great with seafood or as an aperitif, serve chilled at 8-10 degrees C. The winemaking team tried to pack as much Semillon flavour into this wine as they could, but still retain its elegance. Expectations are that this wine will mature well in the medium term and develop the unique Hunter “toast and lemon curd “ characters.
Served as an aperitif, this wine would also be wonderful with oysters or shellfish and will also complement dishes such as prawn and mango salad or cold summer soups. Enjoy this wine in moderation.
