This Chardonnay has been harvested off our home vineyard and partially fermented and matured in a combination of new French and Hungarian 300 L oak barrels.
The wine exhibits aromas of yellow stone-fruit with the toasty, vanillin oak playing a supporting role only, adding a “peaches and cream” note. The palate is soft and rich with nectarine and melon fruit flavours, a creamy mouthfeel and a balanced acid finish that leaves the palate refreshed.
Chardonnay is known as one of the Hunter Valleys icon varieties. Our version of this wine is made in the traditional style of oak barrel fermentation with regular “batonnage” or lees stirring. A small portion was partially fermented in French oak and then blended back with a portion of unoaked wine. It has aromas of banana and stone-fruit and toasty vanillin oak. The palate has a creamy texture with flavours of vanilla and peach and a refreshing acid finish.
